  • 0.25 cup crumbled cotija cheese Optional topping.
  • 2 tbsp fresh cilantro Chopped, for serving.

Assemble the fries
  1. Arrange the watermelon sticks on a large platter in an even layer so they’re easy to season.
  2. Drizzle the watermelon evenly with fresh lime juice for a bright, tangy coating.
  3. Sprinkle the chili lime seasoning generously over the sticks, covering as much surface as possible.
  4. Top with crumbled cotija cheese, if using, so it clings to the lime juice and seasoning.
  5. Garnish with fresh cilantro to add a fresh herbal finish.
  6. Serve immediately to keep the texture juicy and crisp rather than watery.

Notes

For the neatest “fry” shape, cut the watermelon into sticks right before serving. Refrigerate leftovers in a covered container up to 1 day, but expect them to soften; freezing is not recommended. For a dairy-free version, skip the cotija cheese and add extra chili lime seasoning to keep the flavor punch.
