Ingredients
Method
Assemble the fries
- Arrange the watermelon sticks on a large platter in an even layer so they’re easy to season.
- Drizzle the watermelon evenly with fresh lime juice for a bright, tangy coating.
- Sprinkle the chili lime seasoning generously over the sticks, covering as much surface as possible.
- Top with crumbled cotija cheese, if using, so it clings to the lime juice and seasoning.
- Garnish with fresh cilantro to add a fresh herbal finish.
- Serve immediately to keep the texture juicy and crisp rather than watery.
Notes
For the neatest “fry” shape, cut the watermelon into sticks right before serving. Refrigerate leftovers in a covered container up to 1 day, but expect them to soften; freezing is not recommended. For a dairy-free version, skip the cotija cheese and add extra chili lime seasoning to keep the flavor punch.
