Brown the beef
- Heat a skillet over medium-high heat and brown the ground beef with the diced onion for 6–7 minutes, breaking up the beef as it cooks until no longer pink.
Assemble in the slow cooker
- Transfer the browned beef mixture to the crockpot and add the pinto beans, corn, diced tomatoes with green chiles, chili powder, garlic powder, and kosher salt.
- Stir to combine, then sprinkle the shredded cheddar cheese evenly over the top so it melts across the surface.
Add tater tots and cook
- Arrange the frozen tater tots in a single layer over the cheese, pressing them lightly so they sit evenly.
- Cover and cook on low for 4–5 hours (or high for 2–3 hours) until the tater tots are cooked through and hot throughout.
Serve
- Garnish with the chopped fresh chives and serve warm.
Notes
For the best texture, keep the tater tots in a single layer so more edges crisp under the lid. Refrigerate leftovers in an airtight container for up to 3–4 days; reheat in the oven or microwave until steaming. Freezing isn’t recommended because the tater tots can soften after thawing. Dietary swap: use ground turkey instead of ground beef for a lighter option with similar seasonings.
