Ingredients

Main soup
  • 1 lb ground beef
  • 1 onion diced
  • 3 garlic minced
  • 2 can (10 oz) Rotel diced tomatoes with green chiles
  • 1 can (15 oz) black beans drained
  • 1 can (15 oz) pinto beans drained
  • 1 can (15 oz) corn drained
  • 1 packet (1 oz) taco seasoning
  • 1 packet (1 oz) ranch dressing mix
  • 4 cup beef broth
Toppings
  • 0.5 cup shredded cheddar
  • 0.5 cup sour cream
  • 1 cup tortilla chips
  • 0.25 cup cilantro
  • 0.25 cup jalapeños

Equipment

  • 1 Dutch oven

Method

Brown the beef
  1. Brown the ground beef in a large pot over medium-high heat, then drain any excess fat. Cook until no longer pink in the center and you can see browned crumbles.
Sauté aromatics
  1. Sauté the diced onion for 3 minutes. Cook until it softens and turns slightly translucent, then add the minced garlic and cook for 1 minute.
Build and simmer the soup
  1. Add both cans of Rotel, the drained black beans, drained pinto beans, drained corn, taco seasoning, ranch dressing mix, and beef broth to the pot, then stir to combine. Make sure everything is evenly distributed and the broth looks uniformly spiced.
  2. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes. Look for gentle bubbling and a thicker, cohesive broth as the flavors meld.
  3. Season with additional salt if needed. Taste the broth and adjust until it’s balanced to your liking.
Serve with toppings
  1. Serve hot with shredded cheddar, sour cream, and tortilla chips. Add cilantro and jalapeños on top so you get fresh green flecks and extra heat in each bowl.

Notes

Pro tip: If the soup tastes slightly flat, simmer 3-5 minutes longer to deepen flavor before serving. Store leftovers in the refrigerator up to 4 days in an airtight container; freeze up to 3 months (leave off crunchy chips and most toppings until reheated). For a lighter option, use lean ground beef or ground turkey and reduced-fat sour cream.
