Pumpkin batter
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 0.5 cup vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
Cream cheese filling
  • 8 oz cream cheese, softened
  • 0.25 cup granulated sugar
  • 1 egg
Streusel topping
  • 0.5 cup all-purpose flour
  • 0.333 cup packed brown sugar

Method
 

Prep and preheat
  1. Preheat the oven to 350°F and grease a 9x5-inch loaf pan so the loaf releases cleanly.
Make the pumpkin batter
  1. Whisk together the flour, baking soda, cinnamon, nutmeg, and salt until evenly combined.
  2. Whisk the pumpkin puree, sugar, oil, eggs, and vanilla, then combine with the dry ingredients just until the batter is cohesive.
Make the cream cheese filling
  1. Beat the cream cheese, sugar, and egg until smooth and thick, with no visible lumps.
Assemble and swirl
  1. Pour half the pumpkin batter into the pan and spread it into an even layer.
  2. Spoon the cream cheese filling over top in an even mound.
  3. Pour the remaining batter over the filling and spread gently to cover.
  4. Swirl gently with a knife to create marbled streaks (stop before the filling fully mixes in).
Add streusel and bake
  1. Combine the flour and brown sugar for the streusel in a bowl.
  2. Cut the cold butter into the flour mixture until coarse crumbs form with a sandy texture.
  3. Sprinkle the streusel evenly over the top so it bakes into a crisp layer.
  4. Bake for 55–60 minutes at 350°F, until a toothpick comes out mostly clean (a few moist crumbs are fine).
  5. Cool completely before slicing so the swirl sets and the loaf holds together.

Notes

For the cleanest swirl, use a mostly room-temperature cream cheese so it spreads without streaking. Store the loaf tightly wrapped in the fridge for up to 4 days. Freeze slices in an airtight container for up to 2 months. For a lighter option, replace the vegetable oil with an equal amount of neutral yogurt for a softer crumb (texture may be slightly less tender).
