Brew and cool
- Brew the espresso or strong coffee and let cool slightly for 2 minutes.
- Add the brown sugar syrup, ground cinnamon, and apple pie spice to a shaker or jar with a lid and swirl to combine.
- Add the espresso and a handful of ice to the shaker, then shake vigorously for 15–20 seconds until frothy.
- Fill a glass with fresh ice and pour the shaken espresso mixture over the top.
- Pour the oatmilk slowly over the back of a spoon or along the side to create layers if desired.
- Top with whipped cream, if using, and serve immediately.
Notes
Pro tip: shake longer (closer to 20 seconds) for extra foam without thinning the coffee too much. Store any leftover oatmilk mixture separately from ice in the fridge for up to 1 day; re-shake briefly with fresh ice for best texture. Freezing isn’t recommended because the oatmilk can separate when thawed. For a dairy-free upgrade, keep it as written (oatmilk) or swap in a thicker oat-based barista milk if you want a richer mouthfeel.
