Egg whites
  • 1.5 cup egg whites about 8–10 egg whites
Olive oil
  • 1 tbsp olive oil
Bell pepper
  • 0.5 cup bell pepper diced
Onion
  • 0.5 cup onion diced
Spinach
  • 1 cup fresh spinach
Cheddar cheese
  • 0.25 cup shredded cheddar cheese
Kosher salt
  • 0.25 tsp kosher salt
Black pepper
  • 0.25 tsp black pepper
Fresh chives
  • 2 tbsp fresh chives chopped, for serving

Method
 

Cook the vegetables
  1. Heat olive oil in a nonstick skillet over medium heat until it shimmers slightly. This usually takes about 1 minute.
  2. Add the bell pepper and onion, then cook for 3–4 minutes, stirring occasionally, until softened. Keep the heat at medium.
  3. Stir in the spinach and cook for 1 minute, until wilted. Turn the vegetables to coat lightly in the oil.
Scramble and finish
  1. Pour in the egg whites and season with kosher salt and black pepper. Distribute the egg whites evenly across the skillet.
  2. Gently scramble the eggs, stirring occasionally, for 3–4 minutes, until just set. Avoid overcooking to prevent a rubbery texture.
  3. Sprinkle shredded cheddar cheese and fresh chives over the scramble, then serve immediately. The cheese should melt from the residual heat.

Notes

Pro tip: keep the scrambling time tight—egg whites go from just-set to rubbery quickly, so pull them when the center still looks slightly soft. Store leftovers in an airtight container in the refrigerator for up to 2 days; reheat gently in a skillet over low heat until warm. Freezing is not recommended for best texture. For a lower-sodium option, use reduced-sodium cheddar and reduce the salt to 1/8 tsp.
