Ingredients
  

beef brisket
  • 3.5 lb beef brisket
kosher salt
  • 1 tsp kosher salt
black pepper
  • 0.5 tsp black pepper
olive oil
  • 1 tbsp olive oil
Coca-Cola
  • 1 cup Coca-Cola
barbecue sauce
  • 0.75 cup barbecue sauce
Worcestershire sauce
  • 3 tbsp Worcestershire sauce
yellow onion
  • 1 yellow onion sliced
garlic
  • 3 garlic minced

Method
 

Season and sear
  1. Season the brisket all over with kosher salt and black pepper.
  2. Heat the olive oil in a skillet over medium-high heat and sear the brisket for 3–4 minutes per side, until browned.
Build the crockpot sauce
  1. Place the sliced yellow onion and minced garlic in the bottom of the crockpot, then set the seared brisket on top.
  2. Whisk together the Coca-Cola, barbecue sauce, and Worcestershire sauce, then pour over the brisket.
Slow-cook and serve
  1. Cover and cook on low for 8–9 hours, or until the meat shreds easily with a fork.
  2. Remove the brisket, shred it, and toss with some of the cooking liquid before serving.

Notes

For the most even shredding, let the brisket rest in the crockpot liquid for 10 minutes after turning off the heat, then shred and mix in more liquid until it’s saucy. Store leftovers in the refrigerator up to 4 days in a covered container; freeze shredded brisket (with sauce) up to 3 months. For a lower-sodium option, use a reduced-sodium barbecue sauce and Worcestershire sauce if available.
