Simmer and prep the chicken
- Add chicken breast to a Dutch oven with 4 cups chicken broth and the taco seasoning, then simmer at 200°F (or a gentle simmer) for 18-20 minutes until cooked through. You should see small bubbles around the edges as the chicken finishes cooking.
- Remove the chicken from the pot, shred it, and reserve the broth. The broth should stay warm as you return it to the pot.
Build the soup base
- Return the seasoned broth to the Dutch oven, then add corn, black beans, Rotel tomatoes, diced tomatoes, ranch dressing mix, and cumin. Stir until the mix is evenly distributed.
- Return the shredded chicken to the pot, bring to a boil, then reduce to a simmer and cook for 10 minutes. Look for steady bubbling and a thickened, well-combined broth.
Finish and season
- Stir in heavy cream if using, then simmer for 3 more minutes. The soup should look slightly silkier and more golden-orange.
- Season with salt and a squeeze of lime to taste. The lime should brighten the flavor right before serving.
Serve
- Ladle the taco soup into bowls, then top each serving with sour cream, shredded cheddar, tortilla chips, lime wedges, cilantro, and avocado. Finish with fresh toppings so the chips stay crisp.
Notes
Pro tip: shred the chicken while it’s warm so it stays fluffy and mixes evenly into the soup. Store leftovers covered in the refrigerator up to 4 days; reheat gently on the stovetop or microwave. Freezing is yes, but keep toppings separate and add any sour cream or heavy cream only after reheating for best texture. For a lighter option, use half-and-half instead of heavy cream (or skip the cream) for a thinner, less rich broth.
