Method
Brown and build the soup
- Brown the ground beef in a large pot and drain off fat.
- Sauté the onion for 3 minutes, then add the garlic and cook for 1 minute.
- Add black beans, corn, Rotel tomatoes, diced tomatoes, taco seasoning, ranch dressing mix, and beef broth, then bring to a boil.
Simmer and make it creamy
- Simmer the soup for 10 minutes, then reduce heat to low.
- Add the cubed cream cheese and stir until completely melted, then stir in the heavy cream.
- Simmer for 3 to 4 minutes until the soup is heated through.
Serve
- Serve immediately with shredded cheddar, sour cream, crushed tortilla chips, jalapeños, and cilantro on top.
Notes
Pro tip: cube the cream cheese so it melts quickly and stays smooth. Store leftovers in the fridge up to 3 days; reheat gently to avoid breaking the creamy texture. Freezing is not recommended because dairy can separate after thawing. For a lighter option, swap the heavy cream for evaporated milk and use reduced-fat cream cheese if you still want the same creamy finish.
