  • 1 can (10 oz) Rotel tomatoes Includes green chiles; use the heat level you prefer.
  • 1 can (14 oz) diced tomatoes Drained is not required.
  • 1 packet (1 oz) taco seasoning Use one packet.
  • 1 packet (1 oz) ranch dressing mix Use one packet.
  • 3 cup beef broth For broth base.
  • 8 oz cream cheese Cubed for faster melting.

  • 0.25 cup sour cream Dollop on top.
  • 1 tortilla chips Crush right before serving for crunch.
  • 0.25 jalapeños Slice for garnish.
  • 0.25 cilantro Chopped.

Equipment

  • 1 Dutch oven

Method

Brown and build the soup
  1. Brown the ground beef in a large pot and drain off fat.
  2. Sauté the onion for 3 minutes, then add the garlic and cook for 1 minute.
  3. Add black beans, corn, Rotel tomatoes, diced tomatoes, taco seasoning, ranch dressing mix, and beef broth, then bring to a boil.
Simmer and make it creamy
  1. Simmer the soup for 10 minutes, then reduce heat to low.
  2. Add the cubed cream cheese and stir until completely melted, then stir in the heavy cream.
  3. Simmer for 3 to 4 minutes until the soup is heated through.
Serve
  1. Serve immediately with shredded cheddar, sour cream, crushed tortilla chips, jalapeños, and cilantro on top.

Notes

Pro tip: cube the cream cheese so it melts quickly and stays smooth. Store leftovers in the fridge up to 3 days; reheat gently to avoid breaking the creamy texture. Freezing is not recommended because dairy can separate after thawing. For a lighter option, swap the heavy cream for evaporated milk and use reduced-fat cream cheese if you still want the same creamy finish.
