Ingredients

Soup base
  • 2 lb ground beef Use 80/20 for best flavor.

  • 1 can (15 oz) black beans Drained.
  • 1 can (15 oz) kidney beans Drained.
  • 1 can (15 oz) pinto beans Drained.
  • 1 can (15 oz) corn Drained.
  • 1 can (10 oz) Rotel tomatoes Include the peppers and tomatoes.
  • 1 can (14 oz) diced tomatoes Use undrained or drained as you prefer; keep liquid for thickness.
  • 1 packet (1 oz) taco seasoning Use the full packet.
  • 1 packet (1 oz) ranch dressing mix Use the full packet.
  • 1 packet (1 oz) Hidden Valley original Ranch Use the full packet.
  • 4 cup beef broth Helps bring everything to a boil and simmer.
Generous toppings
  • 0.5 shredded cheddar For serving; amount to taste.
  • 0.5 sour cream For serving; amount to taste.
  • 1 tortilla chips For serving; crush lightly if desired.
  • 0.25 green onions Optional garnish for a fresh finish.

Equipment

  • 1 Dutch oven

Method

Brown the beef
  1. Heat a very large pot or Dutch oven over medium-high heat and brown the ground beef with the diced onion, stirring often, until the beef is cooked through; drain excess fat. Keep the heat at medium-high so the beef browns rather than steams.
Build the soup
  1. Add the drained black beans, drained kidney beans, drained pinto beans, drained corn, Rotel tomatoes, and diced tomatoes to the pot along with the taco seasoning, ranch dressing mix, and Hidden Valley original Ranch; stir to combine. Make sure all canned ingredients are evenly distributed and coated in the seasoning.
  2. Pour in the beef broth and bring the mixture to a boil, stirring once or twice to prevent sticking at the bottom. Look for steady bubbling across the surface before reducing heat.
Simmer
  1. Reduce heat to maintain a gentle simmer and cook for 15-20 minutes, stirring occasionally, until the soup thickens slightly. Keep it at a low, active simmer rather than a hard boil for best texture.
Season and serve
  1. Season with salt and pepper to taste, then stir well and let it sit for 2 minutes off the heat. Taste again after it rests briefly so the flavors settle.
  2. Serve hot with a very generous topping of shredded cheddar, sour cream, lots of tortilla chips, and green onions. Add toppings right before eating so the chips keep their crunch.

Notes

Pro tip: drain the onion fat after browning to keep the soup from getting greasy, then taste near the end—beans and tomatoes can vary by brand. Store leftovers in the refrigerator up to 4 days in an airtight container; reheat on the stovetop or microwave. Freeze yes for up to 3 months, but keep cheddar/sour cream toppings separate. For a lighter option, use lean ground beef and low-sodium broth; keep the full seasoning packets for the signature bold flavor.
