Method
Sauté the vegetables
- Heat the olive oil in a large pot over medium heat, then sauté the onion, carrots, and celery for 5 minutes until slightly softened and fragrant.
Build the broth and cook the chicken
- Add the garlic and cook for 1 minute, then stir in the chicken broth, water, dried thyme, dried parsley, bay leaves, and bone-in chicken.
- Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes until the chicken is cooked through.
Shred and finish the soup
- Remove the chicken to a plate, shred with two forks, and remove the bay leaves from the pot.
- Return the shredded chicken to the pot and bring back to a simmer.
- Add the egg noodles and cook for 6-8 minutes until tender.
- Season generously with salt and pepper, then garnish with fresh parsley and serve hot.
Notes
For clearer, better-balanced broth, skim any foam that rises during the first simmer. Refrigerate leftovers in a sealed container for up to 4 days; noodles may soften more over time—reheat gently and add a splash of water or broth if needed. Freezing is not recommended because egg noodles can turn mushy after thawing. Dietary swap: use gluten-free egg noodles if you need a gluten-free version while keeping the cooking times similar.
